INGREDIENTS:
- 1 med can crushed pineapple (don't drain)
- 2 eggs, beaten
- 1 cup sugar
- 2T cornstarch
- 2T margarine, cut into small bits
- cinnamon
- Preheat oven to 375. Grease small casserole dish. (The one I use is a small square one marked 1.5 liters.)
- Mix cornstarch and sugar in a medium bowl.
- Add pineapple, cut up butter, and beaten eggs to the sugar mixture.
- Pour mixture into the casserole dish. Sprinkle with cinnamon. Bake 45 minutes.
Difficulty: super easy
Time: about 10 minutes prep, 45 minutes cooking time
