INGREDIENTS:
- 1 lb lean ground beef
- 2 packages (3 oz each) Oriental ramen noodles, crumbled
- 2 1/2 cups water
- 2 cups frozen broccoli stir-fry vegetable blend
- 1/4 tsp ground ginger
- 2 Tbsp thinly sliced green onion
DIRECTIONS:
- In a large skillet, cook the beef over medium heat for 4-5 minutes or until no longer pink; drain. Add the contents of one ramen noodle flavoring packet; stir until dissolved. Remove beef and keep warm.
- In the same skillet, combine the water, veggies, ginger, noodles, and the contents of the remaining flavoring packet. Bring to a boil.
- Reduce heat; cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally. Return beef to the pan; cook for 2-3 minutes or until heated through. Stir in onion.
Difficulty: very easy
